Saint-Romain may not be one of the most well known villages in the Beaune region but in the hands of a master such as David Moret, it can produce classic white Burgundy. Only 25% of the oak used is new, sympathetic to the lighter Saint-Romain terroir, producing a wine beautifully balancing citrus fruit, dry butterscotch, and minerality.
