30% Macabeu and 70% Garnatxa Blanco, a small portion of the grapes are left in an open amphora to start a spontaneous ferment before these grapes are then used to start the fermentation process in the other parcels. The skin-contact period lasts around 9 days after which pressing takes place and the must is transferred to stainless steel before blending.
