Fernando de Castilla, Antique Pedro Ximénez, NV
Pedro Ximénez grapes are sun dried for 2 days before being fortified and aged in a solera system for 20-30 years. This long period in barrel further increases the residual sugar content leaving a complex, sticky, raisin sweet experience. The truly decadent will soak raisins in this wine for at least 24 hours and serve with a rich vanilla ice cream.
